The Uova in Purgatorio test

That's Eggs in Purgatory for you non-Italian readers out there.

As today is our 17th anniversary I was up early to make breakfast. For those of you out there who have never been called on to make this, it's not too difficult.  You will need - olive oil, a red onion, black olives (large, whole, pitted), tomatoes - whole and peeled, capers, salt and pepper.  Grated cheese to finish with a piece or two of parsley.
With the Highland's rotating bezel, I was able to measure the 5 minute increments between onions, tomatoes and eggs.  Success all around and a great start to Saturday.  Ciao!
